I was in Korea when I met up with a childhood/family friend whom I had not seen in 15 years or so. (She lived in the U.S. and moved to Korea.) I paid her family a visit and after dinner at their place, she asked if I wanted to go out. We went to a jazz club. I guess it was the wine, music, and typical dark jazz club mood because we found ourselves slowly kissing each other at our table. My God, that was perfect. I guess 15 years made our hearts grow much fonder.

There needs to be some kind of published "rules" with regards to paying. I know that they may be some etiquette guidelines from "Miss Manners" and those of her ilk, but I dont' recall them off the top of my head.
Since I am married it's easier. One of us will pick up the tab--sometimes me, sometimes her but we don't keep track of it. However, when I was single, it was confusing at first. After a few years, I set these rules of thumb:
With Female Friends: Separate checks or if one picks up the tab, the other picks up the tab next time.
Dates/Relationships: I usually picked up the tab unless the woman was adamant about splitting or she asked me out and stated specifically "It's my treat." I ended up picking up the tab 75% of the time, but I had no problem with it. There was no ethnic pattern to any of it either.
Lastly, it would be a good idea for you single guys to learn to read women and figure out those who are dating you as "professional daters"--those women who want three nice dinners and then drop you. I learned how to spot them on the first date so that the most I was out was 40 bucks--the cost of dinner and a movie. As opposed to about $200 when you get to the third date--the date when "things happen" if they're ever going to happen at all.
